UK Food Hygiene Ratings Explained: What EHOs Actually Look For

The food hygiene rating scheme affects customer trust and your bottom line. Here is exactly what EHOs inspect and how to prepare.

Understanding the Food Hygiene Rating Scheme

The Food Hygiene Rating Scheme (FHRS) in England, Wales, and Northern Ireland rates food businesses from 0 (urgent improvement necessary) to 5 (very good). In Scotland, the equivalent is the Food Hygiene Information Scheme with a "Pass" or "Improvement Required" result.

Your rating is publicly displayed on the Food Standards Agency website, and increasingly, customers check ratings before choosing where to eat. A low rating can directly impact your revenue.

What EHOs Assess

An Environmental Health Officer evaluates three broad areas during an inspection:

1. Food Hygiene and Safety

  • How food is prepared, cooked, reheated, cooled, and stored
  • Temperature control — are fridges below 5°C? Are freezers at -18°C or below?
  • Cross-contamination prevention — separate chopping boards, proper handwashing
  • Food safety management system — your HACCP plan and records
  • Staff knowledge and training

2. Structure and Cleanliness

  • Condition of the premises — walls, floors, ceilings, lighting, ventilation
  • Cleanliness and state of repair of equipment
  • Pest control measures
  • Layout and space — adequate room for food preparation
  • Waste management and disposal

3. Confidence in Management

  • Is there a documented food safety management system?
  • Are records up to date and accurate?
  • Does the business demonstrate a commitment to food safety?
  • Is there evidence of staff training?
  • Are there systems to handle food safety issues?

How to Prepare for an EHO Visit

  1. Check your documentation — Make sure your HACCP plan, temperature logs, cleaning records, and training records are up to date and readily accessible.
  2. Walk through your kitchen — Look at your premises through the eyes of an inspector. Is everything clean? Are temperatures being logged? Is food stored correctly?
  3. Train your staff — Every team member should know basic food hygiene, understand your HACCP plan, and be able to explain what they do and why.
  4. Check equipment — Are probe thermometers calibrated? Are fridges and freezers at the correct temperature? Is equipment clean and in good repair?
  5. Review pest control — Check for signs of pests, ensure screens and seals are intact, and have your pest control contract up to date.

What Happens if You Get a Low Rating?

If you receive a rating of 0, 1, or 2, the local authority will tell you what improvements are needed. You have the right to appeal within 21 days, request a re-visit after making improvements, or publish a "right of reply" on the FHRS website.
